Catching Up

Just a couple of notes for today… First, I have been remiss in mentioning a few bloggers who have joined our challenge. Second, with one week until Memorial Day weekend, I’ve decided to come up with a casual posting schedule that I will do my best to follow. On Thursday, May 22nd, the Nutrition Food Management class at OSU will be presenting “A Taste of the Valley” at Pangea Restaurant in the Memorial Union on campus. The students have designed their own menu featuring local, fresh, organic ingredients from around the valley. They invite you to support sustainability! The event will run from 10:30 am to 3:00 pm. Offerings from the menu include a salmon burger, penne with chicken and spring vegetables, quiche, a turkey cranberry arugula sandwich, a spinach and strawberry salad with goat cheese, and more! I have declared today to be Reminder Day! • This Thursday, May 15, there is a lecture at OSU called “Eating Good in the Neighborhood: The Medical and Moral History of Dietary Localism” featuring speaker Steven Shapin from Harvard University. It’s at 7pm at the LaSells Stewart Center, C&E Auditorium. You can read the media release here. Last week, early-bird Jen made tasty looking rhubarb muffins. Loved by moms, maybe loved by toddlers… Inspired by Jen’s experiment, I decided to make rhubarb the ingredient of the week. Farms Feed Everyone: A Benefit Dinner (Corvallis)

On May 16th from 6pm-8pm, there will be a benefit dinner held at the First United Methodist Church Community Center in Corvallis (1165 NW Monroe). Farms Feed Everyone will be an evening devoted to building our food system equitably. More early bird stuff & a book recommendation

I have to do another early bird post, because my buddy VM from Harrisburg made two things that sound so wonderful that I just can’t keep them to myself. First, goat cheese and spinach stuffed chicken breast with caramelized shallot sauce — the goat cheese and spinach were from the Corvallis market. This is going to be our recipe of the week next week if she sends it to me in time! (Hint, hint, nudge, nudge.) Second, she made French onion soup grantinee, with onions and green garlic from the Corvallis market. As for me, I have been enjoying the “party in a jar” (goat cheese in olive oil and herbs and lots of other yummy things) from Alsea Acre Alpines. Just slap that on some crackers and I’m all set. In book news… I just finished Farewell, My Subaru: An Epic Adventure in Local Living. I enjoyed it...

Checking in with the early birds…

Whoops… please excuse my little unscheduled absence. Caught a killer cold! Did anyone go to the Corvallis Buy Local First Breakfast? I skipped out so as not to spread my germs too far and wide. A few of our challenge participants have enthusiastically started sharing their finds from the markets and their recipes using local ingredients. Let’s check in: Pat at Cooking from the Market found the first strawberries of the season this weekend at the Albany market. These beautiful little red gems were from Rick Steffens Farm in Silverton and Pat gives us two lovely recipes: spinach salad with strawberries & balsamic vinegar, and panna cotta with caramel & strawberries… if you can keep yourself from just tearing into the plain berries.
