Here’s a recipe from my childhood — and make no mistake, it’s not healthy. But it is delicious and can be presented as either an “elegant” dessert in individual molds or ramekins, or it can be served from one large mold, such as a bundt pan.
I’m not sure about whipping cream, but at least the strawberries and sour cream can be obtained from local sources!
My mom served this occasionally, and my grandma gave me the recipe. I am not sure where it came from originally.
Russian Cream
3/4 cup sugar
1 envelope unflavored gelatin
1/2 cup water
1 cup whipping cream
1 1/2 cups sour cream
1 tsp vanilla
In a small saucepan, combine sugar and gelatin, mixing well, then add the water and let stand 5 minutes. Bring to a full boil, stirring constantly. Remove from heat and add the whipping cream.
In a separate bowl, mix the sour cream with the vanilla. Gradually add the hot sugar mixture into the sour cream and beat until smooth. Pour into a 4 cup mold or several individual molds or ramekins. Cover and chill at least 4 hours.
Un-mold and serve with sliced strawberries. (We’d have vanilla wafers to go along with it too. Tasty!)
